Gluten Free Almond Coffee Cake
Note: You can use any other rice based GF flour blend for this recipe. It doesn’t have to be the one I use.
1 cup Mama’s Almond Blend all purpose gluten free flour
1/2 cup sugar
1/2 tsp salt
1/4 tsp freshly grated nutmeg
1/4 tsp xanthan gum
2 tsp double acting baking powder
1 egg
1/2 cup almond milk
1/2 tsp vanilla
2 Tbsp melted butter
For topping:
1/2 cup crushed raw almonds
1/4 cup brown sugar
1 tsp cinnamon
1 Tbsp GF flour
1 Tbsp butter
(Just mush all these topping ingredients together with your fingers.)
1. Heat oven to 375. Liberally grease 8x8 pan with butter.
2. Mix all dry ingredients, then add in all the wet ingredients.
3. Sprinkle on topping and bake for 20 minutes.
